Happy Lil Bakery Bakes Up Delicious Treats

For anyone looking for delicious treats, you only need to look to Happy Lil Bakery to find something.

Born and raised in Kindersley, Amy Lucier moved around a little after high school before ultimately deciding to return and raise her two boys, ages eight and one here.

And lucky for us, she did. In fact, it was while she was on maternity leave that things came together to form Happy Lil Bakery. “Baking has always been one of my go-to activities whenever I’m bored and while I was on maternity leave, I desperately wanted a really good donut and, well, here we are!” laughed Lucier

From cookies to gourmet brownie boxes, to jaw-dropping cake creations, Lucier has a knack for creating one-of-a-kind ideas and flavours, but when asked what her favourite thing to make is, she was quick to respond. “Cake decorating. It kind of just happened one day. I decorated my own birthday cake and had so much fun that I was hooked. Now it is definitely my favorite part of baking.” But not stopping at just a simple cake, Lucier decided to create a structured cake for her son’s first birthday. “It was my first ever structured cake. It was a teddy bear holding up a cake with another teddy bear cake on top. We had to transport it only about five minutes away, but the structure definitely could have been better, so it was the most stressful car ride of my life.”

When you see Lucier’s photos on Facebook and Instagram, she makes it look easy, but that isn’t always the case. “Macarons are by far the hardest thing that I’ve ever made. They are finicky little things that depend on silly things like the weather to turn out properly. I wish I could say that I won’t ever make them, but I have been determined to get them perfect, so practice, practice, practice!”

In the future, Lucier hopes to have a separate space for Happy Lil Bakery, but in the meantime, she is busy preparing for the upcoming holiday season where she has created Hot Cocoa Charcuterie Boards, Holiday Treat Trays, Treat Boxes all available for order!
